How to Start Composting from Kitchen Waste in a Small Indian Home

We started composting our own kitchen waste almost two years ago, in a two-bedroom apartment with a single narrow balcony — not a farmhouse, not a backyard, just a balcony that gets about four hours of direct sun. What follows is not a theoretical guide copied from a gardening encyclopedia; it's the actual method we settled on after three failed attempts (one smelly, one that attracted fruit flies, one that simply stalled and never broke down), and it's the version that has now run continuously, without a single smell complaint from a shared building corridor.

Why Compost at Home in the First Place

Roughly a third of the waste that leaves an average Indian kitchen is organic — vegetable peels, fruit skins, tea leaves, eggshells, and leftover cooked food. Sent to a landfill, this waste doesn't break down cleanly; it decomposes anaerobically (without oxygen) in compressed waste piles, releasing methane, a greenhouse gas far more potent than CO2. Composted at home instead, that same waste becomes free, nutrient-rich soil amendment for your plants within 6 to 10 weeks, and it never leaves your building.

Beyond the environmental angle, the practical reason we started was simpler: our potting soil for balcony vegetables was getting compacted and lifeless after a year of watering, and buying fresh organic compost every few months from a nursery was adding up. Making our own solved both problems.

What You Actually Need (No Special Equipment Required)

You do not need a rotating drum composter or an expensive imported bin to start. Here is exactly what we used for our first successful batch:

• One container with a lid, 10–20 litres, with small holes drilled in the sides and bottom for airflow (we used an old plastic storage bin; a terracotta matka or a bucket works equally well)
• A layer of dry "brown" material to start — dry leaves, shredded newspaper, or cardboard
• Kitchen scraps ("green" material) — vegetable peels, fruit scraps, tea leaves, coffee grounds, crushed eggshells
• A handful of garden soil or old compost, to introduce the microbes that actually do the decomposing
• A stick or old spoon for turning the pile

That's the entire equipment list. The holes for airflow are the single most important detail — skipping them was the exact mistake behind our first, smelly attempt.

The Brown-to-Green Ratio That Actually Prevents Smell

Almost every composting failure in a small home comes down to one imbalance: too much wet kitchen waste ("green" material) and not enough dry, carbon-rich material ("brown" material). Too much green, and the pile turns anaerobic — that's where the bad smell and fruit flies come from.

The ratio we now use, after testing several: roughly 3 parts brown to 1 part green, by volume, not weight. In practice, this means every time we add a bowl of vegetable peels, we also add a similar-sized handful of dry leaves or shredded newspaper on top. This one change eliminated the smell problem completely within the same week we adopted it.

If you don't have easy access to dry leaves in an apartment setting, shredded cardboard or plain newspaper (avoid glossy, printed pages) works just as well and is something most households already have.

What You Can and Cannot Compost

We keep a small list taped inside our kitchen cabinet, because getting this wrong is the second-most-common reason home composting fails.

Safe to compost: vegetable peels and scraps, fruit peels (except large amounts of citrus, which we limit — see below), tea leaves and tea bags (paper ones only), coffee grounds and filters, eggshells (crushed), dry leaves, shredded paper and cardboard, small amounts of cooked rice or dal.

Avoid or limit: meat, fish, and bones (they smell strongly as they break down and attract pests in an apartment setting), dairy products, oily or heavily spiced cooked food, large quantities of citrus peel (in large amounts it can slow decomposition due to acidity), diseased plant material, and any plastic or synthetic material, obviously.

We personally avoid meat and dairy entirely in our balcony setup, not because they can never be composted, but because in a small, enclosed apartment space, the smell and pest risk isn't worth it. If you have more outdoor space and airflow, a hot composting method can handle small amounts of these.

Our Actual Weekly Routine

This is the exact process we follow, week to week, which took some trial and error to settle into a rhythm that didn't feel like a chore:

Step 1 — Collect. We keep a small covered container on the kitchen counter for daily scraps, emptied into the main compost bin every 2–3 days rather than adding scraps one spoonful at a time.

Step 2 — Layer. Each time we add kitchen scraps, we immediately cover them with a handful of dry leaves or shredded paper. This single habit does more to prevent smell and flies than anything else we tried.

Step 3 — Turn. Once a week, we turn the pile with a stick, mixing the top and bottom layers. This reintroduces oxygen and speeds up decomposition significantly — our turned batches finished in roughly 6–8 weeks, versus 10–12 weeks for pile's we left untouched.

Step 4 — Monitor moisture. The pile should feel like a damp sponge — not dry and dusty, not soggy and dripping. In Indian summers, we occasionally add a splash of water if it dries out; during monsoon, we keep the lid on more consistently to avoid it getting waterlogged.

How Long It Actually Takes (Realistic Timeline)

Most generic guides give a vague "a few months" answer. Based on our own tracked batches over two years, here's what we've actually observed in Indian conditions:

Summer (30–38°C): Faster decomposition due to heat — our fastest batch finished in 5 weeks with weekly turning.
Monsoon: Slower and needs more careful moisture management; excess rainwater getting into an outdoor bin can waterlog it. Our monsoon batches took 9–10 weeks.
Winter (North Indian conditions, below 15°C): Noticeably slower — microbial activity drops in cooler temperatures. Our winter batch took nearly 12 weeks to finish.

You'll know it's ready when the material looks dark brown, crumbly, and earthy-smelling — with no recognizable vegetable pieces left, and no bad odor at all. If it still smells sour or looks slimy, it needs more time and possibly more dry "brown" material mixed in.

Dealing with Fruit Flies and Ants (Without Chemicals)

Our second failed attempt was overrun with fruit flies within a week. Here's what actually fixed it, based on that specific failure:

1. Always bury fresh scraps under a layer of dry material immediately — exposed wet scraps are what attract flies in the first place.
2. Keep the lid on, with just enough small holes for airflow, not large open gaps.
3. If ants show up, it usually means the pile has gotten too dry; a light misting of water and mixing in slightly more green material tends to resolve it, since ants generally prefer dry conditions over consistently moist ones.

Using the Finished Compost

Once finished, we mix our compost into potting soil at roughly a 1:4 ratio (one part compost to four parts existing soil) for established plants, and use it more generously as a top-dressing for container vegetables between growing seasons. We've noticed visibly darker, more vigorous leaf growth in tomato and chili plants within about three weeks of a compost top-dressing, compared to plants that only received our regular watering routine.

Frequently Asked Questions

Do I need a garden to compost? No. Our entire successful setup runs on a single apartment balcony with a lidded plastic bin. A terrace, balcony, or even a well-ventilated utility area works.

Will it smell? A properly balanced pile (enough dry "brown" material, adequate airflow, regular turning) should not have a strong odor — at most a mild, earthy smell. A bad smell is almost always a sign of too much wet waste and not enough dry material, or insufficient airflow.

Can I compost in a small apartment without a balcony? Yes, though it requires more careful odor management — a bokashi bin (an anaerobic fermentation method using a specific bran) is worth researching separately, as it's designed for indoor, sealed-container use, though we have not personally tested this method extensively ourselves and can't speak to it with the same confidence as the outdoor balcony method above.

How often should I turn the pile? Weekly turning gave us the fastest, most consistent results in our own tracked batches; turning less often simply extends the timeline rather than causing failure.

What We'd Tell Someone Just Starting Out

If we were starting over, the one piece of advice we'd give ourselves is this: don't wait to get the "perfect" bin or ratio before starting. Start with whatever container you have, add the brown-to-green layering habit from day one, and adjust based on what you actually observe — smell, moisture, speed — rather than following a rigid recipe. Composting is closer to a feedback loop than a fixed formula, and the adjustments described in this guide are exactly the ones we made in response to real problems, not guesses made in advance.
